banana blueberry fiber muffins (vegan & gluten-free) Something Vegan

2 cups gluten-free oat flour
1 cup gluten-free oats
3/4 cup flax seed meal
1/3 cup chia seeds
1/4 cup organic brown sugar
3 Tbsp. coconut flour
1 tsp. ground cinnamon
1 tsp. baking powder
1/2 tsp. salt
3 ripe bananas, pureed
1 1/2 cup non-dairy milk
1/4 cup coconut oil, melted
1 cup blueberries, I used frozen
1/2 cup pecans, chopped

Preheat the oven to 350 degrees. To a bowl, add oat flour, oats, flax seed meal, chia seeds, brown sugar, coconut flour, cinnamon, baking powder, and salt. Stir well. Add pureed bananas, non-dairy milk, and coconut oil. Stir well. Add blueberries, and pecans, and stir in. Scoop the batter into a greased muffin pan. Bake 35-40 minutes. Makes one dozen muffins. Each muffin has over 8 grams of fiber, and over 6 grams of protein.
